Crispy white fillet with bold flavors, a seafood lover's favorite by Curtis Stone.
Ingredients:
  • 125.00 ml macadamia nuts
  • 125.00 ml dried breadcrumbs
  • 20.00 ml parsley, roughly chopped
  • 20.00 ml chives, chopped
  • 80.00 gm butter, softened
  • 4 x 170g barramundi fillets, skin removed
Instructions:
  • Preheat your oven to 200⁰C.
  • Put all the crust ingredients into a food processor and pulse until a coarse crust forms, leaving the macadamia nuts chunky.
  • Season with salt and pepper to taste, then set aside.
  • Preheat a large nonstick saute pan over medium-high heat, then add the olive oil.
  • Season the fillets generously with salt and pepper, then lay them in the pan with the flesh side facing down. Cook them for 1 to 2 minutes until they turn a light golden brown.
  • Gently flip the fish using a thin flat spatula, then evenly distribute the crust on top of each fish in a thin layer.
  • Place the pan in the oven and bake for 4 to 5 minutes until the fish is cooked through and the crust is golden brown.
  • Take the fish out of the oven and promptly serve it alongside a choice of a refreshing salad or delicious sauteed vegetables.
