Make Macadamia-crusted fish with herb salad for a flavorful midweek dinner.
Ingredients:
  • 300g macadamia
  • 1 garlic clove, chopped
  • 1 lemon, zested, juiced, plus wedges to serve
  • 36.40 gm extra virgin olive oil
  • 1/2 bunch fresh flat-leaf parsley
  • 1/2 bunch chives
  • 4 x 160g skinless barramundi fillets
  • 50g mixed salad leaves, to serve
Instructions:
  • Preheat the oven to 200°C and prepare a baking tray with parchment paper.
  • In a small food processor, combine nuts, garlic, zest, half of the juice, and 1 tablespoon of oil; pulse into a coarse paste. Transfer the paste to a bowl, season with salt and pepper. Finely chop 2 tablespoons each of parsley and chives, then mix into the paste.
  • Lay the fish on a baking tray and generously top with the flavorful nut mixture. Bake until the crust is beautifully golden and the fish turns opaque, about 15-20 minutes.
  • Gather any parsley leaves left and cut chives in half. Mix with salad leaves, the rest of the oil, and lemon juice. Add seasoning and serve with fish and lemon wedges.
