Elevate fish fillets with a gourmet macadamia nut crust for a delicious and crispy weeknight dinner.
Ingredients:
  • 1 lemon
  • 190g (1 1/4 cups) macadamia nuts
  • 18.20 gm olive oil
  • 20.00 ml chopped fresh dill
  • 1 garlic clove, crushed
  • 4 firm white fish fillets
  • 20g butter
  • 300g baby spinach leaves
Instructions:
  • Preheat your oven to 180°C while you prepare a baking tray with non-stick baking paper. Finely grate the lemon zest, then cut the lemon in half to remove the seeds before juicing it.
  • Crush macadamia nuts in a mortar until they resemble coarse breadcrumbs. Mix with lemon rind, oil, dill, and garlic. Season with salt and pepper. Spread mixture over fish, pressing down gently. Bake for 8-10 minutes until fish flakes easily with a fork.
  • Heat butter in a frying pan over medium-high heat. Add spinach and lemon juice. Stir and cook until spinach wilts, about 1-2 minutes.
  • Arrange the spinach evenly on serving plates and place the fish on top.
