"Delicious Hawaiian dessert featuring coconut, perfect for holiday gatherings. Enjoy warm with ice cream or cold with whipped cream. Make ahead for an easy addition to your feast!"
Ingredients:
  • 1.25 cups macadamia nut pieces
  • 1 cup unsweetened coconut flakes
  • 2 (9 inch) refrigerated pie crusts
  • 1.5 cups semi-sweet chocolate chips
  • 3 eggs, slightly beaten
  • 2 teaspoons vanilla extract
  • 1 cup light corn syrup
  • 3 tablespoons margarine or butter, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Toast macadamia nut pieces and coconut flakes in separate pans in the oven until golden brown, for approximately 8 minutes. Then, allow them to cool.
  • Place one pie crust in a 12 to 14-inch fluted tart pan. Cut the other pie crust into strips and use them to seal the edges of the tart pan securely. Press chocolate chips gently into the crust. Set aside.
  • Combine eggs, vanilla, and corn syrup in a large bowl until smooth. Mix in sugar, margarine, macadamia nuts, and coconut flakes, then pour over pie crust.
  • Bake in a preheated oven for 50 to 55 minutes, or until a knife inserted halfway between the center and the edge of the crust comes out clean. Allow to cool completely on a wire rack.
