Coconut prawns with lemon-lime dipping sauce

Savor a sunny, easy and delightful treat that's finger-licking good.
Ingredients:
  • 1kg medium green prawns
  • 1 egg
  • 40ml (2 tbsp) milk
  • 150g (1 cup) plain flour
  • 130.00 gm shredded coconut
  • Vegetable oil, to shallow fry
  • 250ml (1 cup) good-quality mayonnaise
  • 1 lime, zested, juiced
  • 1/2 lemon, zested, juiced
Instructions:
  • Peel and devein the prawns, leaving the tails on.
  • In a small bowl, whisk together the egg and milk. Coat prawns lightly in flour, then dip in the egg mixture and coat with coconut. Fry prawns in hot oil for 1-2 minutes per side until golden brown. Place on paper towel to drain.
  • Combine all sauce ingredients in a small bowl and mix well. Serve with the prawns.
