Coconut raisin shortbread cookies enhanced with pecans for a delightful crunch.
Ingredients:
  • 1 cup white sugar
  • 1 egg yolk
  • 2.25 cups all-purpose flour
  • 2.25 cups flaked coconut
  • 0.5 cup raisins
  • 0.25 cup finely chopped pecans
Instructions:
  • Combine butter, white sugar, egg yolk, and vanilla in a medium bowl until smooth. Add flour and mix well. Fold in coconut, raisins, and pecans. Refrigerate for at least 4 hours or overnight.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets. Roll dough into tablespoon-sized balls or logs, placing them 2 inches apart on the prepared sheets.
  • Bake for 25-30 minutes in the preheated oven until lightly browned, then transfer to wire racks to cool.
