Coconut-infused Rice Krispie treats with condensed milk for a tropical twist.
Ingredients:
  • 1 (14 ounce) can sweetened condensed milk
  • 0.5 cup coconut milk
  • 1 tablespoon unsalted butter
  • 1 pinch salt
  • 0.66666668653488 cup marshmallows
  • 4 cups crispy rice cereal (such as Rice Krispies®)
  • 0.5 cup coconut flakes, or more to taste
Instructions:
  • In a medium saucepan over low heat, combine condensed milk, coconut milk, and butter. Stir until the butter has melted and the mixture is fully blended. Add salt and stir well.
  • Turn up the heat to medium-low and drop in the marshmallows. Stir continuously until the marshmallows have completely melted into a smooth liquid, creating a thick, jelly-like texture that easily sticks together and detaches cleanly from the pan edges.
  • Raise heat to medium and continue melting until the mixture reaches a thinner consistency. Take off heat and gently fold in rice cereal and 1/2 cup coconut flakes until well combined. Allow to rest and cool for 30 minutes.
  • Put on plastic gloves and shape the mixture into 1-inch balls using your hands. Sprinkle with extra coconut flakes for more flavor, if desired.
