Coconut rice with snow peas and green onions for a crunchy and flavorful twist.
Ingredients:
  • 18.40 gm vegetable oil
  • 4 green onions, thinly sliced
  • 300.00 gm jasmine rice, rinsed
  • 378.75 gm coconut milk
  • 125g snow peas, trimmed, thinly sliced
Instructions:
  • In a large saucepan, warm oil over low heat. Sauté onion for 2 minutes until softened. Add rice and stir to coat. Increase heat to medium-high, pour in coconut milk and 1 1/2 cups cold water, cover, and bring to a boil. Lower heat and simmer for 15 minutes until rice is tender. Enjoy!
  • Take the saucepan off the heat and gently combine the snow peas. Let it rest with the lid on for 5 minutes before fluffing up the grains with a fork.
