Passionfruit elevates dessert with vibrant flavor!
Ingredients:
  • 187.50 ml sago
  • 505.00 gm coconut milk
  • 6 passionfruit, halved (see tip)
  • 65g palm sugar, grated
  • 225g can pineapple pieces in juice, drained
  • 40.00 gm caster sugar
Instructions:
  • Combine sago, coconut milk, and 1 cup cold water in a heavy-based saucepan. Let it stand for 30 minutes to soak.
  • In a saucepan over low heat, combine the passionfruit pulp and palm sugar. Stir and cook for 4 minutes until the sugar dissolves. Increase the heat to medium and bring to a simmer. Allow it to simmer for 4 to 5 minutes until slightly thickened. Remove from heat and gently mix in the pineapple. Let it cool completely.
  • 1. In a saucepan, gently warm the sago mixture over medium heat until it comes to a gentle boil, stirring occasionally. 2. Lower the heat and continue to cook while stirring often, for 10 to 15 minutes until the sago pearls are tender. 3. Once cooked, remove from heat and stir in caster sugar. 4. Divide the sago mixture into four 1-cup glasses. 5. Cover each glass with plastic wrap and chill in the refrigerator for about 15 minutes until slightly cooled.
  • Drizzle passionfruit mixture over sago in glasses. Enjoy while fresh.
