Flavorful, low-calorie cookies with 1g of fat per bite.
Ingredients:
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 3/4 cup sugar
  • 1/4 teaspoon almond extract
  • 2 cups flaked coconut
  • 12 candied cherries, each cut into fourths, if desired
Instructions:
  • Preheat oven to 300°F and line a cookie sheet with aluminum foil or parchment paper. Using an electric mixer, beat egg whites, cream of tartar, and salt until foamy. Gradually add sugar while continuing to beat until mixture is stiff and glossy. Transfer mixture to a medium bowl and gently fold in almond extract and coconut.
  • Spoon mixture onto a cookie sheet, leaving space between each teaspoonful. Top each cookie with a cherry piece. Bake for 20 to 25 minutes until edges turn light brown. Let cool for 10 minutes before transferring to a wire rack.
