Transform leftover cod and mashed potatoes into delectable Parmesan and garlic cod cakes.
Ingredients:
  • 1 pound of cod fillets
  • 2 medium-sized Russet potatoes
  • 1 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/2 teaspoon pepper
  • 2 eggs, lightly beaten
  • Extra virgin olive oil or canola oil
Instructions:
  • Cook the potatoes until tender, then mash and set aside.
  • Simmer the cod fillets in water until easily flaked, about 3 to 5 minutes. Drain, flake with a fork, and remove any bones.
  • Combine the flaked fish, potatoes, and remaining ingredients until well mixed by hand. Adjust consistency by adding an extra egg if crumbly or more breadcrumbs if sticky.
  • Shape the mixture into cakes and cook in a generously oiled skillet over medium-high heat until golden brown on both sides.
