Delicious and flaky fish cakes, perfect for a quick and satisfying meal with your favorite greens.
Ingredients:
  • 500g potatoes, peeled, coarsely chopped
  • 50g butter
  • 2 cloves garlic, crushed
  • 2 tsp finely chopped fresh rosemary
  • 40.00 ml chopped fresh chives
  • Finely grated zest of 2 lemons
  • 500g smoked cod fillets
  • 750ml milk
  • 40g plain flour
  • 2 eggs, lightly beaten
  • 140g breadcrumbs
  • Vegetable oil for shallow frying
  • Salad, to serve
  • Lemon wedges, to serve
Instructions:
  • Boil potatoes until tender, then drain and mash with butter, garlic, rosemary, chives, and lemon zest.
  • Place cod fillets in a large frying pan, covering them with milk. Bring to a boil, then simmer for 4 minutes. Allow to cool slightly, then remove the skin, flake the flesh, and fold gently through the potato mixture. Season to taste.
  • Shape mixture into 8 uniform patties and chill for 20 minutes. Prepare three small bowls with flour, eggs, and breadcrumbs. Take patties out of the refrigerator and generously coat each first with flour, then egg, and finally breadcrumbs.
  • Fry patties in hot oil until golden on both sides for 1-2 minutes. Drain on paper towels. Serve hot with salad and lemon wedges.
