Wholesome fish with vibrant fruit salsa, ready in 30 minutes for a delightful dinner option.
Ingredients:
  • 1 can (11 ounces) pineapple and mandarin orange segments, drained, coarsely chopped
  • 1 tablespoon chopped red onion
  • 2 teaspoons chopped fresh cilantro
  • 2 teaspoons lime juice
  • 1/8 teaspoon salt
  • 1/2 to 1 jalapeño chili, seeded, chopped (2 to 3 teaspoons)
  • 1 tablespoon packed brown sugar
  • 1 tablespoon fresh lime juice
  • 2 swordfish, tuna or halibut steaks, 3/4 inch thick (4 ounces each)
Instructions:
  • Combine all salsa ingredients in a microwave-safe bowl. Heat on High for 1 1/2 to 2 minutes, stirring halfway through, until heated through. Keep warm by covering.
  • Preheat oven to broil, and grease the broiler pan rack with cooking spray.
  • Combine the rich flavor of brown sugar with the tangy freshness of lime juice in a small bowl. Place the succulent tuna steaks on a rack in the broiler pan and generously brush them with the tantalizing brown sugar mixture.
  • Broil the fish 4 to 6 inches from the heat for 4 to 5 minutes on each side until it flakes easily with a fork, while brushing occasionally with the delicious brown sugar mixture. Serve with salsa.
