Caramelized onions enhance tuna steaks to new heights.
Ingredients:
  • 1 tablespoon olive oil
  • 2 medium onions, thinly sliced
  • 3 peppercorns
  • 1/2 bay leaf
  • 1/2 cup dry white wine or chicken broth
  • 2 (6 to 8-oz.) tuna steaks
Instructions:
  • In a large skillet, heat oil over medium heat until hot. Add the onions and cook for about 15 minutes, or until they turn a lovely golden brown color, while stirring occasionally.
  • Combine the peppercorns, bay leaf, and wine in the pot and bring it to a boil. Lower the heat to medium-low and simmer for 10 minutes, stirring occasionally.
  • Push the onions to the side of the skillet. If needed, drizzle in more oil. Crank up the heat to high, then introduce the tuna steaks; sear for roughly 3 minutes until they get a beautiful brown crust on both sides.
  • Reduce the heat to medium and cook for 4 to 6 minutes, or until the fish easily flakes with a fork, stirring the onions occasionally. Serve the tuna steaks with onions.
