Cod and potato fish cakes with onion and parsley: crispy golden exterior, tender and flaky interior.
Ingredients:
  • 2 large potatoes, peeled and halved
  • 1 pound cod fillets, cubed
  • 1 large egg, beaten
  • 1 tablespoon butter
  • 1 tablespoon grated onion
  • 1 tablespoon chopped fresh parsley
  • 3 tablespoons oil for frying
Instructions:
  • In a large pot, simmer potatoes in salted water until almost tender, about 15 minutes. Add cod and simmer until both cod and potatoes are soft, about 5 more minutes.
  • After draining thoroughly, place in a large mixing bowl. Mix in egg, butter, onion, and parsley until thoroughly combined. Shape the mixture into four patties.
  • In a large skillet over medium-high heat, gently sizzle the patties until they are beautifully golden brown on each side, which should take around 3 to 5 minutes per side. Transfer them to paper towels to drain before serving.
