Crispy Parmesan-crusted baked cod.
Ingredients:
  • 0.25 cup fine dry bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon cornmeal
  • 1 teaspoon olive oil
  • 0.5 teaspoon Italian seasoning
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon ground black pepper
  • 4 (3 ounce) fillets cod fillets
  • 1 egg white, lightly beaten
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Combine bread crumbs, cheese, cornmeal, oil, Italian seasoning, garlic powder, and pepper in a small shallow bowl; set aside.
  • Prepare the broiling pan by spraying the rack with cooking spray. Carefully arrange the cod on the rack, folding under any thin edges of the filets. Brush with the egg white and generously sprinkle the crumb mixture on top for a delightful finish.
  • Roast in a hot oven for 10 to 12 minutes, or until the fish easily flakes with a fork and is fully opaque.
