Savory fish sautéed in fragrant olive oil with zesty Italian herbs and ripe tomatoes.
Ingredients:
  • 1 pound thin skinless fish fillets
  • Salt
  • 1/4 cup extra virgin olive oil
  • 2 large fresh tomatoes, cut into chunks
  • 2 teaspoons Italian seasoning
  • A splash of Tabasco or other hot sauce
  • Black pepper to taste
Instructions:
  • Prepare fillets by carefully removing any pin bones and gently drying them with a paper towel. Generously season the fish fillets with salt and place them on a cutting board.
  • Sear fish on one side: Heat olive oil in a skillet over medium heat for 2 minutes. Place fish fillets in the skillet - they should sizzle softly. Let them cook for 90 seconds without moving.
  • Baste fish fillets by tilting the pan and using a large spoon to continuously drizzle them with hot oil until the tops begin to flake, approximately 3 minutes.
  • Combine tomato chunks, Italian seasoning, and a splash of Tabasco in the pan. Swirl and cook for 90 seconds. Remove from heat.
  • Enhance sauce by swirling tomatoes in pan: Place a fish fillet on each plate. Gently swirl the tomatoes in the pan and season with black pepper to your liking; this method will create an emulsified sauce. Spoon tomatoes and sauce over each fillet and serve immediately. Accompany with crusty bread and a dry rose wine.
