Revolutionize fish dinners with this simple, foolproof recipe. 5 ingredients, ready in 15 minutes for perfect fish every time. Flavorful and fast!
Ingredients:
  • 8 rashers of higher-welfare smoked pancetta
  • 2 x 150 g white fish fillets such as cod, skin off, pin-boned, from sustainable sources
  • 2 sprigs of fresh rosemary
  • 1 x 250 g sachet of cooked lentils
  • 200 g spinach
Instructions:
  • Overlap 4 rashers of pancetta, then place a piece of cod on top. Season generously with black pepper, roll and wrap in the pancetta. Repeat this step. Cook in a large non-stick frying pan on medium heat for 8 minutes, turning occasionally. Add rosemary in the last 2 minutes. Transfer the fish to a plate. Toss lentils in the pan with 1 tablespoon of red wine vinegar, let them absorb the flavors for 1 minute. Quickly wilt spinach with a splash of water. Season to taste with sea salt and pepper. Divide lentils and spinach between plates. Place wrapped cod on top, garnish with rosemary, and drizzle with 1 teaspoon of extra virgin olive oil.
