Elevate fresh cod with lemon, garlic, and chives in baked foil pouches for a burst of flavor.
Ingredients:
  • 4 (6 ounce) cod fillets
  • 4 teaspoons olive oil
  • 1 bunch fresh chives, coarsely chopped
  • 2 lemons, sliced
  • 2 cloves garlic, sliced
Instructions:
  • Heat your oven to a toasty 400 degrees Fahrenheit (200 degrees Celsius).
  • Prepare 4 large squares of heavy-duty aluminum foil. Brush olive oil on each fillet and season with salt and black pepper. Center each fillet on a foil square. Arrange lemon slices along the fillets, then top with garlic slices and chives. Fold foil over the fish, seal tightly by rolling the edges 2 or 3 times, and flatten the edges for optimal flavor infusion.
  • Cook in the preheated oven until the fish turns opaque and easily flakes with a fork, for about 15 to 20 minutes.
