Quick and delicious pan-seared cod with homemade lemon aioli for a satisfying weeknight dinner.
Ingredients:
  • 2 tablespoon mayonnaise
  • 1/2 teaspoon lemon zest
  • 1 teaspoon lemon juice, or more to taste
  • 1 teaspoon grated garlic
  • 1 teaspoon milk, or more as needed
Instructions:
  • Make a zesty lemon aioli by mixing mayonnaise, lemon zest, lemon juice, and grated garlic in a bowl. Season with salt and pepper to taste, then add milk to thin it to a drizzling consistency.
  • Dry the fish with a paper towel. In a skillet over medium-high heat, heat olive oil and butter. Season both sides of the cod with Italian seasoning, salt, and pepper.
  • Sear cod in the hot skillet until golden brown on both sides and easily flakes with a fork, about 3-4 minutes per side. Serve on plates with lemon aioli.
