Serve silky custards with vibrant berries for a visually stunning and delicious dessert.
Ingredients:
  • 1/4 cup water
  • 1 envelope unflavored gelatin (2 teaspoons)
  • 2 cups fat-free cottage cheese
  • 4 oz (half 8-oz package) reduced-fat cream cheese (Neufchâtel)
  • 4 oz (half 8-oz package) fat-free cream cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2 cups fresh raspberries, blackberries, blueberries or combination
Instructions:
  • In a small saucepan, add water and sprinkle gelatin over the top. Allow it to sit for 1 minute to soften. Heat the mixture over medium heat for about 2 minutes, stirring occasionally, until the gelatin is fully dissolved. Take the saucepan off the heat and let it cool slightly before using.
  • Add the rest of the ingredients, excluding the berries, to the food processor. Process for 1 to 2 minutes until very smooth, pausing to scrape down the sides as necessary. Then, mix in the cooled gelatin mixture.
  • Prepare a 3-cup heart-shaped mold or bowl by lining it with cheesecloth, allowing some to hang over the sides. Pour the cheese mixture into the mold and loosely fold the cloth over the top. Chill in the refrigerator for at least 4 hours until it is just firm, or leave it overnight.
  • Invert the serving plate over the mold, flip it over, and lift off the mold. Decorate with fresh berries.
