Indulge in a delightful coffee granita for a sweet and energizing treat.
Ingredients:
  • 40g ground espresso coffee
  • 110g caster sugar
  • 2.20 gm vanilla extract
  • 200ml thickened cream
  • Chocolate-coated coffee beans (optional), to garnish (see Notes)
Instructions:
  • Mix the ground espresso coffee and 400ml of boiling water in a heatproof bowl. While hot, stir in the caster sugar and vanilla extract until the sugar dissolves. Let it cool.
  • Transfer the coffee mixture into a shallow container and chill in the freezer for 2 hours or until it begins to set.
  • Take the container out of the freezer and use a fork to break up the crystals on the surface. Place it back in the freezer for 1 hour. Remove it, scrape the crystals again, and repeat this step twice more. Finally, store in the freezer until ready to serve, for up to 5 days.
  • Chill 4 small glasses. In a bowl, whip cream and 1 tablespoon of caster sugar until soft peaks form. Serve.
  • Using a fork, lightly break up the granita once more before assembling layers of granita and cream in chilled glasses. Top with chocolate-coated coffee beans for garnish, if desired, and serve promptly.
