Coffee pecan biscuits

Elevate classic biscuits with a touch of coffee and a nutty twist.
Ingredients:
  • 125g butter, softened
  • 107.50 gm caster sugar
  • 2.20 gm vanilla extract
  • 1 egg, at room temperature
  • 500.00 ml plain flour
  • 4.00 gm baking powder
  • 20.60 gm milk
  • 4.00 tsp espresso coffee powder
  • 225g pecan nuts
  • 112.50 gm icing sugar mixture
  • 20.00 gm boiling water
  • 20.00 gm butter, softened
Instructions:
  • Preheat your oven to 180C and prepare 2 baking trays by lining them with parchment paper.
  • With an electric mixer, whip together butter, sugar, and vanilla in a small bowl until light and creamy. Mix in the egg and coffee powder until fully incorporated. Gradually sift in the flour and baking powder over the butter mixture. Pour in the milk and gently blend until just mixed. Divide the dough in half.
  • Shape each piece of dough into a 4.5cm diameter log, then finely chop 1 cup of pecans. Roll the logs in the chopped pecans until fully coated and wrap them in plastic wrap. Refrigerate for 30 minutes until firm.
  • Slice logs into 1.5cm-thick slices using a sharp knife. Arrange on lined baking trays and bake for 15 to 18 minutes, rotating trays halfway through, until light golden. Cool on trays for 5 minutes, then transfer to wire racks to cool completely.
  • For the coffee icing, sift icing sugar into a bowl. In another bowl, combine boiling water, butter, and coffee powder, stirring until the coffee is dissolved. Pour this mixture into the icing sugar and stir until smooth.
  • Place a dollop of icing in the center of each biscuit and decorate with a pecan. Let the icing firm up before serving. Enjoy!
