Coffee souffles with sweet mascarpone

Delightful coffee-flavored French pastries that are light and delicious.
Ingredients:
  • 4 egg yolks
  • 2 egg whites
  • Melted butter, to grease
  • 100g (1/2 cup) caster sugar, extra
  • 10.00 gm cornflour
  • 20.00 ml plain flour
  • 125ml (1/2 cup) milk
  • 40.00 ml Kahlua liqueur
  • 20.00 ml instant coffee powder
  • 1 x 250g container mascarpone, \tat room temperature
  • 24.00 gm icing sugar mixture
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C. Gently brush eight 185ml (3/4-cup) ramekins with melted butter. Sprinkle some sugar inside each ramekin, then place them on a baking tray.
  • In a small saucepan, whisk together the sugar, cornflour, and plain flour. Gradually whisk in the milk and half of the liqueur using a wire balloon whisk. Cook over medium heat, stirring constantly, for 5 minutes until the mixture boils and thickens slightly. Remove from heat, add the coffee, and whisk until dissolved. Stir in the egg yolks and transfer to a large bowl.
  • Beat egg whites with an electric beater until soft peaks form. Gently fold one-quarter of the egg whites into the coffee mixture. Gradually fold in remaining egg whites. Divide mixture among ramekins, smooth the top, and run your thumb around the rim. Bake for 20 minutes until risen.
  • In a medium bowl, mix together the mascarpone, icing sugar, and the rest of the liqueur.
  • After baking, transfer the soufflés to individual serving plates. Sprinkle with icing sugar and serve right away with a dollop of sweet mascarpone on the side.
