"Surprise your guests with a secret ingredient that will have them raving about your dish."
Ingredients:
  • 20.00 ml freshly ground coffee
  • 125ml (1/2 cup) boiling water
  • 1 onion, coarsely chopped
  • 3 garlic cloves, crushed
  • 20.00 ml coarsely chopped fresh rosemary
  • 50ml brandy
  • 42.00 gm soy sauce
  • 28.60 gm honey
  • 1 tsp cracked black pepper
  • 1 x 1.2kg easy-carve lamb leg
  • Roast vegetables, to serve
Instructions:
  • In a heatproof bowl, combine the coffee with boiling water and let it brew for 3-5 minutes. Transfer the coffee mixture to a food processor, add onion, garlic, rosemary, brandy, soy sauce, honey, and pepper, then process until smooth. Season generously with salt.
  • Place the lamb in a glass or ceramic dish, pour in the coffee mixture, ensuring it's evenly coated. Refrigerate for 6 hours or overnight to marinate.
  • Preheat oven to 200°C. Place the lamb on a wire rack in a roasting pan with water coming 2cm up the side of the pan. Roast for 40 minutes, then reduce temperature to 160°C and roast for another 40 minutes for medium-rare or cooked to your liking. Let it rest, covered, for 10 minutes and serve with roast vegetables.
