Coffee-Crusted Pork Loin

Savor a coffee-crusted pork loin with roasted vegetables for a delicious dinner.
Ingredients:
  • 2 tablespoons freshly ground coffee or instant espresso powder
  • 2 tablespoons packed light brown sugar
  • 3 teaspoons kosher (coarse) salt
  • 2 teaspoons coarse ground pepper
  • 1 teaspoon garlic powder
  • 1 boneless pork loin roast (3 to 3 1/2 lb)
  • 8 large carrots, cut into 3-inch pieces
  • 6 large cloves garlic, peeled
  • 1 large red onion, cut into 8 wedges
  • 2 tablespoons olive oil
  • 2 tablespoons adobo sauce (from can of chipotle chiles)
Instructions:
  • Preheat oven to 425°F. Combine coffee, brown sugar, 2 teaspoons of salt, pepper, and garlic powder in a small bowl. Generously coat pork on all sides with the coffee mixture. Wrap in plastic wrap and let it sit for at least 10 minutes to absorb the flavors, or refrigerate for up to 2 hours.
  • Prepare the roasting pan by spraying it with cooking spray. Place the pork in the pan with the fat side facing up. In a medium bowl, mix carrots, garlic, and onion with oil, then sprinkle with the remaining teaspoon of salt. Arrange the seasoned vegetables around the pork in the pan.
  • Roast the pork until a meat thermometer inserted into the center reads 145°F, about 40 to 50 minutes. Transfer the pork to a serving platter and cover it with foil for 3 minutes before slicing. Stir adobo sauce into the pan drippings and toss with roasted vegetables. Serve the vegetables and sauce around the pork on the platter.
