Delicious and portable tortellini salad with veggies, olives, feta, and Greek dressing. Great for on-the-go meals or outdoor dining!
Ingredients:
  • 1 (16 ounce) package fresh cheese tortellini
  • 1.5 cups chopped grape tomatoes
  • 1.5 cups chopped cucumbers
  • 1 medium green bell pepper, chopped
  • 1 medium red bell pepper, chopped
  • 0.33333334326744 cup chopped red onion
  • 0.33333334326744 cup Kalamata olives
  • 1 (4 ounce) package crumbled feta cheese
  • 1 cup Greek salad dressing
Instructions:
  • Bring a pot of salted water to a boil, then cook the tortellini until al dente, about 6 to 7 minutes. Drain and transfer to a large bowl.
  • Combine tomatoes, cucumbers, bell peppers, red onion, Kalamata olives, and feta cheese in a bowl. Pour salad dressing and toss until everything is well coated.
  • Allow the dish to cool in the refrigerator for 2 hours before enjoying.
