Chill out with a Persian-inspired yogurt soup packed with Greek yogurt, mint, cucumbers, walnuts, and fresh herbs.
Ingredients:
  • 2 cups Greek-style yogurt
  • 1 teaspoon salt
  • 2 teaspoons crushed dried mint
  • 2 cups cold water, or more as needed
  • 2 Persian cucumbers, diced
  • 0.25 cup raisins
  • 0.25 cup chopped walnuts
  • 0.5 cup chopped fresh mint
  • 0.5 cup chopped fresh parsley
  • 2 teaspoons ground dried Persian rose petals
  • ice cubes
  • 2 pita bread rounds, or to taste
Instructions:
  • Blend yogurt, salt, dried mint, and water in a blender until smooth.
  • Distribute the cucumbers, raisins, walnuts, and herbs evenly into four bowls.
  • Divide the yogurt mixture equally into each bowl.
  • Garnish with fragrant rose petals and drop a couple of ice cubes into each bowl.
  • Tear bread into small pieces and sprinkle over each bowl. Allow bread to soak for 5 to 7 minutes before serving chilled.
