Ring in the Chinese New Year with healthy homemade noodles.
Ingredients:
  • 18.40 gm rice bran oil
  • 400g chicken breast fillets, trimmed
  • 85.80 gm smooth peanut butter
  • 42.00 gm light soy sauce
  • 40.00 gm warm water
  • 30.00 ml apple cider vinegar
  • 20.00 gm caster sugar
  • 3 tsp sesame oil
  • 440g packet fresh thin egg-style noodles
  • 4 green onions, trimmed, thinly sliced
  • 1/2 tsp Sichuan peppercorns, pounded (see note), to serve (optional)
Instructions:
  • In a non-stick frying pan over medium-high heat, sear the chicken for 8 minutes on each side until golden and fully cooked. Remove from heat and let it rest on a plate for 10 minutes to cool. Use two forks to shred the chicken into fine pieces.
  • In a jug, combine peanut butter, soy sauce, water, vinegar, sugar, and sesame oil. Whisk until smooth.
  • In a large heatproof bowl, pour boiling water over the noodles and let stand for 1 to 2 minutes until tender. Use a fork to separate the noodles, then drain and rinse under cold water. Transfer the noodles to a bowl and mix in the chicken, sauce, and onion. Serve in takeaway boxes topped with pounded Sichuan peppercorns.
