Korean cold noodles with tangy kimchi - a refreshing summer lunch favorite in northern China.
Ingredients:
  • 4 ounces spaghetti, or as needed
  • 2 cups very cold ice water
  • 0.5 cup white vinegar
  • 2 tablespoons soy sauce
  • 2 teaspoons sambal oelek (chile paste)
  • 1 cucumber, cut into matchsticks
  • 0.5 cup kimchi
  • 0.25 cup roasted peanuts
  • 1 hard-cooked egg, halved
  • 2 slices deli ham, cut into bite-sized pieces
Instructions:
  • 1. Boil a large pot of salted water. Once boiling, add spaghetti and cook until al dente, about 12 minutes, stirring occasionally.
  • In a bowl, mix ice water, vinegar, soy sauce, sugar, and sambal oelek. Chill the sauce in the refrigerator while the spaghetti cooks.
  • Cool the cooked spaghetti by rinsing under cold water until completely cooled; then drain thoroughly.
  • Divide the sauce evenly between 2 chilled serving bowls. Top each bowl with spaghetti, cucumber, kimchi, peanuts, egg, and ham. Serve right away.
