Indulge in this guilt-free creamy coleslaw for a light and satisfying meal.
Ingredients:
  • 1/2 (about 750g) Chinese cabbage, finely shredded
  • 2 celery sticks, thinly sliced
  • 1 red capsicum, quartered, deseeded, thinly sliced crossways
  • 1 large carrot, coarsely grated
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 125g Cottage Cheese
  • 1 egg
  • 20.00 ml white wine vinegar
  • 11.80 gm Dijon mustard
  • 1 small garlic clove, crushed
  • Pinch sugar
  • 80g (1/3 cup) sour light cream
  • Salt & ground black pepper, to taste
Instructions:
  • For the dressing, combine cottage cheese, egg, vinegar, mustard, garlic, and sugar in a blender. Blend until silky smooth. Transfer the mixture to a bowl with sour cream and mix gently. Season generously with salt and pepper.
  • Combine the cabbage, celery, capsicum, carrot, and cucumber in a large bowl, tossing well to mix.
  • Toss the dressing with the coleslaw until fully combined. Taste and adjust seasoning to your preference.
