Colorful roasted vegetable salad with corn, zucchini, carrot, and celery - a refreshing twist on summer flavors.
Ingredients:
  • 1 carrot, cut into small cubes
  • 1 (16 ounce) package frozen roasted corn (such as Trader Joe's)
  • 1 small zucchini, quartered and thinly sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 stalk celery, diced
Instructions:
  • Put the carrot in a microwave-safe bowl along with 1 cup of water. Cook in the microwave until it reaches a crisp-tender texture, approximately 1 minute. Then, drain the water.
  • In a skillet over medium-high heat, warm up 1 tablespoon of oil. Stir in corn and saute until heated through, around 3 to 5 minutes. Then, add zucchini and cook until crisp-tender, about 2 to 3 more minutes. Transfer the mixture to a large bowl and allow it to cool.
  • Combine the olive oil, honey, lemon juice, water, salt, and pepper to create a flavorful dressing. Add in the carrot, corn, zucchini, and celery. Refrigerate or serve at room temperature.
