Savory couscous with garlic, peppers, scallions, tomatoes, basil, and Parmesan cheese.
Ingredients:
  • 1 cup couscous
  • 1 cup boiling water
  • 3 tablespoons olive oil
  • 1 clove garlic, minced
  • 0.25 cup diced red bell pepper
  • 4 green onions, sliced
  • 1 cup cherry tomatoes
  • 1 cup fresh basil leaves
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 dash balsamic vinegar
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Add couscous to vigorously boiling water, bring back to a boil. Cover, remove from heat, and allow to rest for 5 minutes. Fluff with a fork before serving.
  • Cook the couscous first. Then, in a large skillet over medium heat, heat oil and sauté garlic, green onions, and peppers briefly. Add tomatoes, basil, the cooked couscous, salt, and pepper. Mix everything together before transferring to a casserole dish. Finish by splashing balsamic vinegar on top.
  • After baking for 20 minutes in the preheated oven, generously sprinkle Parmesan cheese over the dish while it's still warm.
