Whip up a gorgeous and effortless cheesy egg bake with hash browns, frozen veggies, and pre-sliced ingredients for a quick and delicious meal.
Ingredients:
  • 12 eggs
  • 1 bag (1 1/4 pounds) refrigerated shredded hash browns
  • 1 tablespoon butter or margarine
  • 2 medium green onions, sliced (2 tablespoons)
  • 1 package (8 ounces) sliced mushrooms
  • 1 cup frozen mixed vegetables (from 1-pound bag), thawed
  • 2 cups shredded Cheddar cheese (8 ounces)
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
Instructions:
  • Preheat oven to 350°F. Grease a 13x9x2-inch rectangular baking dish with cooking spray and evenly spread the hash browns on the bottom.
  • In a 10-inch skillet over medium heat, melt the butter until it's sizzling. Sauté the onions and mushrooms in the butter for 5 to 7 minutes, or until the mushrooms are tender, stirring occasionally. Add the mixed vegetables and blend them in.
  • In a large bowl, vigorously whisk together the eggs, cheese, milk, salt, and pepper until thoroughly combined. Gently fold in the mushroom mixture and pour the mixture into a baking dish.
  • Bake for about 40 minutes until the center of the eggs is fully set.
