Creamy tomato and cannellini bean soup with shallots and a hint of spice - ready in under 30 minutes.
Ingredients:
  • 2 tablespoons olive oil
  • 0.5 cup diced shallots or onion
  • 0.25 teaspoon dried red pepper flakes
  • 1 (15 ounce) can Contadina® Tomato Sauce
  • 1 (14.5 ounce) can Contadina® Diced Tomatoes, undrained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (14.5 ounce) can reduced sodium chicken broth
  • 1 teaspoon Chopped fresh basil
Instructions:
  • In a large saucepan over medium heat, sauté shallots and red pepper flakes in olive oil until softened, stirring occasionally for 2 to 3 minutes.
  • Combine all remaining ingredients, excluding basil. Puree the mixture in a saucepan using a hand-held immersion blender, or puree in batches using a blender or food processor. Reheat the mixture in the saucepan until heated through.
  • Garnish with fresh basil before serving, to add a burst of flavor and freshness.
