Ingredients:
  • 0.75 cup white sugar
  • 0.5 cup packed brown sugar
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 8 peanut butter cups, cut into 1/2 inch pieces
Instructions:
  • Combine the flour, baking powder, and baking soda, then set aside.
  • Carefully arrange each ingredient as listed in a 1 quart wide mouth canning jar, packing each layer down firmly. Ensure ingredients are tightly packed. Finish by adding chopped peanut butter cups as the final layer.
  • 1. Detach peanut butter cups from jar and keep to the side. 2. Transfer the remaining cookie mix from the jar into a large mixing bowl and combine thoroughly using your hands. 3. Introduce 1/2 cup of room temperature butter or margarine, avoid using diet margarine. Add 1 slightly beaten egg and 1 teaspoon of vanilla extract. 4. Combine the ingredients until completely mixed, using your hands may be necessary. 5. Gently fold in the peanut butter cups. 6. Shape the mixture into walnut-sized balls and arrange them 2 inches apart on greased cookie sheets. 7. Bake at 375 degrees F (190 degrees C) for 12 to 14 minutes until the edges turn lightly golden. Let the cookies cool for 5 minutes on the baking sheet before transferring them to cooling racks. Yield: 2 1/2 dozen cookies.
