Delicious make-ahead dessert with nutty crust and creamy citrus filling.
Ingredients:
  • 1/2 cup firm butter or margarine
  • 1/2 cup finely chopped walnuts or pecans
  • 1 teaspoon grated lime peel
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 1/2 cup Key lime juice or regular lime juice
  • 2 teaspoons grated lime peel, if desired
  • 2 cups whipping cream
  • Few drops green food color, if desired
Instructions:
  • Preheat oven to 350°F. In a medium bowl, combine flour and butter using a pastry blender or two knives until well mixed. Mix in walnuts and 1 teaspoon of lime peel. Press the mixture evenly into the bottom of a 9-inch square pan.
  • Bake until golden brown, approximately 15 minutes. Allow to cool completely for about 30 minutes.
  • Combine condensed milk, lime juice, and 2 teaspoons of lime peel in a medium bowl, then set aside. In a chilled large bowl, use an electric mixer on high speed to whip the whipping cream and food color until stiff peaks form.
  • Gently mix lime mixture into whipped cream until combined. Pour over crust and refrigerate for at least 2 hours, but no more than 48 hours. Keep stored in the refrigerator.
