Copycat McDonald's Apple Pies

Satisfy your fast food cravings with homemade McDonald's apple pies. Easy recipe for both air fryer and oven baking.
Ingredients:
  • 2 cups peeled, chopped (1/2-inch) apples (from 2 small [12 ounces total] mixed variety apples)
  • 1 1/2 teaspoons fresh lemon juice (from 1 medium lemon)
  • 2 tablespoons light brown sugar
  • 3 tablespoons granulated sugar, divided
  • 1 teaspoon ground cinnamon, divided
  • 1 tablespoon unsalted butter
  • 1 1/2 teaspoons cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 (14.1 ounce) pkg. refrigerated pie crust, softened according to package directions (such as Pillsbury)
  • 1 large egg, beaten
  • Cooking spray
Instructions:
  • Prepare all ingredients.
  • Combine apples and lemon juice in a bowl. Sprinkle with brown sugar, 2 tablespoons of granulated sugar, and 1/2 teaspoon of cinnamon. Let it sit for about 5 minutes until the apples release some juice.
  • In a saucepan, melt butter over medium-high heat until bubbling. Add the apple mixture and lower the heat to medium. Cook, stirring occasionally, until apples are softened and juices are slightly reduced, for about 6 to 9 minutes. Stir in cornstarch and vanilla and cook, stirring constantly, until the mixture is bubbling and thickened, approximately 1 minute. Remove from heat and cool slightly for 15 to 30 minutes before serving.
  • Gently flatten one refrigerated pie crust into a 12-inch circular shape.
  • Cut the dough into 8 (4x2-inch) rectangles, discarding any scraps or saving them for later use. Cover the dough with plastic wrap and repeat with the remaining pie crust. Place the 8 dough rectangles on a work surface and brush lightly with egg, making sure to coat all the way to the edges.
  • Spoon 1 1/2 tablespoons of apple filling onto the center of each rectangle, leaving a 1/4-inch border on all sides while discarding any excess juices in the bowl.
  • Place the remaining dough rectangles on top, gently stretching to match the edges of the base dough. Seal the edges by pressing the tines of a fork along the sides and lightly brush the tops with egg.
  • Preheat the air fryer to 350°F for 5 minutes. While the air fryer is heating up, make 3 diagonal cuts on top of each pie for ventilation.
  • Combine the remaining 1 tablespoon of sugar and 1/2 teaspoon of cinnamon in a small bowl, then sprinkle the mixture over the pies.
  • Prepare air fryer basket with a light coat of cooking spray. Place 4 pies in the basket and air fry until beautifully golden and crisp, for about 14 to 17 minutes. Repeat the process with the remaining pies.
  • Presentation is key. Serve the dish warm to enjoy it at its best.
