Homemade crispy fish sandwich with signature tartar sauce, better than fast food. Full recipe below.
Ingredients:
  • Canola oil, for frying
  • 4 (4-ounce) (4- x 4-inch) skinless cod fillets (about 1-inch thick)
  • 1 teaspoon kosher salt, divided
  • 1 large egg
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon corn starch
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon paprika
  • 2 cups panko (Japanese-style breadcrumbs)
  • 4 brioche hamburger buns, split
  • 4 (1/2-ounce each) processed American cheese slices
  • 2 teaspoons tap water
  • McDonald's Tartar Sauce
  • Cooked shoestring fries, for serving
Instructions:
  • Collect all ingredients needed. Fill a large Dutch oven with oil until it reaches a depth of 2 inches and heat the oil over medium-high heat until it reaches 360 degrees F (182 degrees C). Preheat the oven to 200 degrees F (93 degrees C. Place a wire rack inside a large rimmed baking sheet and set it aside.
  • As the oil heats up, dry fillets with paper towels and generously sprinkle with 1/2 teaspoon of salt. In a medium shallow bowl, combine egg, mayonnaise, Dijon mustard, corn starch, flour, paprika, and the remaining 1/2 teaspoon of salt. Place panko in another bowl. Dip each fillet in the egg mixture, ensuring all sides are coated and shaking off excess. Transfer to the panko bowl, coating thoroughly. Place coated fillets on a large plate, and repeat with the rest of the fillets.
  • Carefully lay 2 fillets in hot oil and fry, stirring and flipping occasionally, until they turn golden brown and crispy, which should take about 3 to 5 minutes. Use a slotted spoon to take out the fillets from the oil and transfer them to a wire rack. Keep them warm in the preheated oven while you repeat the frying process with the other 2 fillets.
  • Place the bottom buns on a large microwavable plate, top each bun with a slice of cheese, and lightly sprinkle a small paper towel with water. Place the wet paper towel in a small microwavable bowl with the bottom buns. Cover the plate with an inverted microwavable glass bowl and microwave on HIGH until the buns are steamy and the cheese is melted, about 15 to 20 seconds. Carefully remove the buns from the plate and place the top buns on the same plate. Microwave on HIGH for an additional 10 to 15 seconds.
  • Top the bottom buns with a fish fillet and generously drizzle 2 tablespoons of McDonald’s Tartar Sauce on top. Place the top buns on, and serve alongside shoestring fries. Repeat the process with the remaining buns and fish fillets.
