Puerto Rican Coquito: Creamy coconut eggnog with a tropical twist and a splash of rum, perfect for celebrating Christmas!
Ingredients:
  • 1 (12 fluid ounce) can evaporated milk
  • 2 large egg yolks, beaten
  • 1 (14 ounce) can cream of coconut
  • 1 (14 ounce) can sweetened condensed milk
  • 0.5 cup white rum
  • 0.5 cup water
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
Instructions:
  • Assemble all the ingredients needed for the recipe.
  • Whisk together evaporated milk and egg yolks over a double boiler. Cook while stirring until thick enough to coat the back of a spoon and reaches 160°F (71°C).
  • Pour the mixture into a blender along with cream of coconut, sweetened condensed milk, rum, water, vanilla, cinnamon, and cloves. Blend for about 30 seconds until well combined.
  • Transfer the mixture into clean glass bottles and keep chilled in the fridge; enjoy cold or over ice, as preferred.
