Whip up a quick and delicious coriander chicken stir fry for dinner.
Ingredients:
  • 500g chicken thigh fillets, trimmed of any excess fat, thinly sliced across the grain
  • 1 185g jar coriander, garlic & sesame stir-fry starter (Asia at Home brand)
  • 12.00 gm sesame seeds
  • 18.40 gm vegetable oil
  • 1 bunch (about 220g) baby choy sum, ends trimmed, washed
  • 48.80 gm oyster sauce
  • 1/2 tsp sesame oil
  • 300g (1 1/2 cups) jasmine rice, cooked following packet directions
Instructions:
  • Combine chicken and stir-fry starter in a bowl. Stir well. Heat a large wok or frying pan over medium-high heat. Cook sesame seeds for 2-3 minutes until golden. Transfer to a plate. Heat half the oil in the wok over high heat. Stir-fry half the chicken mixture for 3-4 minutes until cooked. Transfer to a plate and cover to keep warm. Repeat with remaining oil and chicken mixture.
  • Steam choy sum in a large steamer basket over simmering water for 3-4 minutes until just wilted and bright green. Then, mix oyster sauce and sesame oil.
  • Plate the cooked rice, add choy sum, drizzle with oyster sauce, top with chicken, sprinkle sesame seeds, and serve hot.
