Coriander and chilli marinated skewers

Elevate your BBQ game with this zesty marinade for perfectly seasoned meat skewers.
Ingredients:
  • 2 brown onions, chopped
  • 4 garlic cloves, crushed
  • 250.00 ml roughly chopped fresh coriander leaves and stems
  • 125ml (1/2 cup) fresh lemon juice
  • 125ml (1/2 cup) light olive oil or vegetable oil
  • 40.00 ml ground coriander
  • 20.00 ml garam masala
  • 20.00 ml chilli flakes
  • 20.00 ml ground turmeric
Instructions:
  • Combine onions, garlic, fresh coriander, lemon juice, oil, ground coriander, garam masala, chilli flakes, and turmeric in a blender. Pulse until coarsely chopped and thoroughly mixed, scraping down the sides as needed. Skewer lamb, beef, or chicken evenly. Place in a shallow glass or ceramic dish. Coat skewers with the marinade. Cover and refrigerate for 1-2 hours to marinate. (See note for freezing instructions.)
  • Preheat the barbecue grill on high, then lower the heat to medium. Grill the skewers, turning and brushing with leftover marinade from the dish, for 8-10 minutes until fully cooked.
