Corn Bread Beef Bake

Savory beef baked with corn bread twists for a flavorful Mexican-inspired meal.
Ingredients:
  • 1 pound ground beef
  • 1 can (14 1/2 ounces) Mexican-style stewed tomatoes, undrained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (8 ounces) tomato sauce
  • 1/2 cup frozen whole kernel corn
  • 2 teaspoons chili powder
  • 1 can (11 1/2 ounces) refrigerated corn bread twists
Instructions:
  • Preheat the oven to 350°F.
  • Brown the beef in a 10-inch ovenproof skillet over medium heat for 8 to 10 minutes, stirring occasionally. Drain any excess fat.
  • Add tomatoes, beans, tomato sauce, corn, and chili powder to the pot. Bring to a boil. Gently place the cornbread twists on top in a round shape without unwinding them, pressing down slightly.
  • Bake without a cover for 35-40 minutes, or until the cornbread turns a beautiful golden brown.
