Cornbread Cowboy Casserole

Savory beef, Cheddar cheese, and buttery cornbread layered in a golden-baked cowboy casserole for a hearty and delicious meal.
Ingredients:
  • 2 pounds ground beef
  • 1 small onion, chopped
  • 2 (7 ounce) packages sweet yellow cornbread mix (such as Martha White®)
  • 1 cup milk
  • 2 eggs
  • 1 (15 ounce) can creamed corn
  • 2 cups shredded Cheddar cheese
  • 2 tablespoons butter, or more to taste
Instructions:
  • In a hot skillet, brown and crumble the beef for 5 to 7 minutes. Discard grease, then add onion and cook until soft, about 5 minutes.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In a large bowl, mix together cornbread mix, milk, eggs, and creamed corn until well combined.
  • Evenly layer the beef mixture on the bottom of a baking dish. Sprinkle a generous amount of Cheddar cheese over the beef. Gently pour the cornbread batter over the cheese layer.
  • Bake in the preheated oven for 17 to 22 minutes or until golden brown and a toothpick inserted into the center comes out clean. Spread butter on top and allow it to cool for 5 minutes before slicing.
