Delicious cowboy skillet with meat, beans, peppers, and a sweet corn bread topping. Easily customizable with extra veggies, Cheddar cheese, jalapeños, and chili powder for added flair. Perfect for a quick family meal or potluck dish.
Ingredients:
  • 1 pound ground beef
  • 0.5 onion, chopped
  • 2 red bell peppers, cut into 2 inch pieces
  • 1 (15 ounce) can baked beans
  • 1 tablespoon dry fajita seasoning
  • 1 (8.5 ounce) package corn bread mix
  • 0.33333334326744 cup milk
Instructions:
  • Preheat the oven to 350°F (175°C) for perfect baking results.
  • Heat ground beef in a large cast-iron skillet until nicely browned, breaking it up as it cooks. Drain any excess grease, then add onion and cook until translucent. Stir in red peppers, beans, and fajita seasoning, cooking until heated. Arrange everything evenly in the skillet.
  • Mix the cornbread mix with eggs and milk following the package instructions. Spoon the mixture over the ground beef and spread evenly.
  • Transfer the skillet to the oven and bake for 20 minutes, or until a toothpick inserted into the cornbread layer comes out clean. Allow to cool briefly before serving.
