Cheesy pork sausage bake made with Gold Medal® flour ready in just 40 minutes for a delicious breakfast!
Ingredients:
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1/4 cup cornmeal
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/3 cup milk
  • 2 tablespoons vegetable oil
  • 1 package (12 oz) bulk pork sausage
  • 1/2 cup sliced red bell pepper
  • 1/2 cup sliced onion
  • 6 eggs
  • 1/4 cup milk
  • Dash of pepper
  • 1 tablespoon butter or margarine
  • 2 cups shredded Cheddar cheese (8 oz)
  • 2/3 cup thick & chunky salsa, if desired
Instructions:
  • Preheat the oven to 400°F. Grease a 13x9-inch pan with cooking spray or shortening. Combine flour, cornmeal, sugar, baking powder and 1/4 teaspoon salt in a medium bowl. In another bowl, mix milk, oil and egg. Add the egg mixture to the flour mixture and stir until just moistened. Spread the batter in the pan and bake for 10 to 13 minutes until lightly golden brown.
  • In a 10-inch nonstick skillet, sauté the sausage, bell pepper, and onion over medium-high heat for 5 to 7 minutes until the sausage is no longer pink. Drain any excess grease and set the sausage aside, keeping it warm.
  • Combine eggs, milk, salt, and pepper in a medium bowl and whisk until thoroughly combined.
  • In a skillet, heat butter over medium heat until sizzling. Add the egg mixture. Gently lift and fold the cooked edges with a spatula to allow the uncooked parts to flow to the bottom. Avoid over stirring. Cook for 3 to 4 minutes until the eggs are thickened but still moist.
  • Place eggs over the hot crust, layer with sausage mixture, and sprinkle generously with cheese. Bake for 5 to 7 minutes until the cheese is perfectly melted. Enjoy with a side of salsa.
