Kid-approved oatmeal cookie recipe with the option to add 1/2 cup of chopped nuts.
Ingredients:
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 0.5 cup margarine
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 2 cups quick cooking oats
  • 1 cup butterscotch chips
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Combine flour, baking soda, baking powder, and salt in a bowl; set aside.
  • In a large bowl, use an electric mixer to blend brown sugar, white sugar, margarine, and oil until smooth. Add eggs one at a time, beating well after each addition. Stir in the flour mixture until just combined, then mix in oats and butterscotch chips. Drop spoonfuls of dough 2 inches apart onto ungreased baking sheets.
  • Bake in the preheated oven for 10 to 12 minutes, until the edges are golden. Let the cookies cool briefly before transferring to wire racks to cool completely.
