Corn chips with corn salsa

Enjoy crispy corn chips with flavorful chunky salsa.
Ingredients:
  • 2 corn cobs, husks and silk removed
  • Olive oil spray
  • 1/2 small red onion, finely chopped
  • 3 spring onions, chopped
  • 2 garlic cloves, crushed
  • 40.00 ml chopped coriander
  • 42.00 gm lime juice
  • 1/2 x 180g tub Persian feta, drained, crumbled
  • 117.50 gm sour cream
  • 20.80 gm hot chilli sauce, plus extra to serve (optional)
  • 175g packet cheese-flavoured corn chips
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high heat. Lightly coat corn with oil and grill for 10-15 minutes until golden and cooked. Let it cool slightly, then slice off the kernels. Combine corn with red onion, spring onion, garlic, coriander, lime juice, seasoning, and feta in a large bowl. Gently mix everything together.
  • Mix sour cream and chili sauce in a small bowl.
  • Place the corn chips in a single layer on a platter. Spoon a generous teaspoon of corn mixture onto each chip and lightly press down. Finish with a half teaspoon of sour cream mixture and a drop of extra chili sauce on top.
