Tex-Mex inspired meat lovers pizza with zesty avocado, crunchy corn chips, and mild tomato salsa.
Ingredients:
  • 200g lean beef mince
  • 1.25 gm ground cumin
  • Large pinch of cayenne pepper
  • 1 avocado, halved, stone removed, peeled
  • 21.00 gm fresh lime juice
  • 2 tomatoes, cut into 1cm pieces
  • 62.50 ml chopped fresh coriander
  • 1 frozen pizza base
  • 70g pizza sauce
  • 60g coarsely grated cheddar
  • 80g (1/3 cup) refried beans
  • 50g corn chips
  • Light sour cream, to serve
Instructions:
  • Heat a large non-stick frying pan over high heat. Cook the mince for 4 minutes until browned, breaking up any lumps with a wooden spoon. Add cumin and cayenne pepper, cook for 1 minute until aromatic. Season with salt and pepper to taste.
  • In a small bowl, gently mash together the avocado and lime juice using a fork. In another small bowl, mix the tomato and coriander, then season with salt and pepper.
  • Preheat your oven to 220°C. Transfer the frozen pizza base to a baking tray. Evenly spread the pizza sauce, sprinkle over the cheddar, and add the mince mixture on top. Bake for 15-20 minutes until the cheddar is melted, and the base is crisp and golden.
  • Spread the refried beans at the center of the pizza, layer with the avocado mixture and corn chips. Top with the tomato mixture, a dollop of sour cream, and fresh coriander leaves. Serve promptly.
