"Enjoy a flavorful twist with Pizza Tlayuda, a crispy and thin-crust Mexican pizza inspired by Oaxaca's famous street food."
Ingredients:
  • For the refried black beans:
  • 1 tablespoon avocado oil, or vegetable oil
  • 2 cloves garlic, crushed
  • 2 tablespoons sliced green onion, white parts only
  • 1 teaspoon ground cumin
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon ancho chili powder, or paprika
  • 1/2 cup water
  • 1 can (15-oz) black beans, drained
  • 1 teaspoon kosher salt, plus more to taste
  • 1 teaspoon dried Mexican oregano
  • Pinch of cayenne
  • 2 tablespoons pork lard, bacon fat, or “asiento” (see note below)
  • 2 tablespoons lime juice
  • For the rest of the Tlayuda:
  • 6 large flour tortillas
  • 3 tablespoons avocado oil
  • 12 ounces grated Monterey Jack, Mozzarella, or Oaxacan cheese, if available
  • 12 whole Brussels sprouts, cored, separated into whole leaves
  • 2/3 cup sliced green onions, using the green tops
  • 2 tablespoons olive oil
  • Salt to taste
  • 1/2 cup thinly sliced radishes
  • 1/2 cup red chili sauce or salsa
  • 1/2 cup cilantro leaves
